🔎 Recipe Notes:
🧂 Choosing Your Salmon:
- Wild-caught salmon tends to have firmer texture and richer flavour, but farmed salmon is more affordable and still works well.
- Skin-on fillets help keep the fish moist and are easier to flip, but either type works.
🍁 Maple Syrup Tip:
- Use real maple syrup—not pancake syrup or imitation. The natural sugars caramelize beautifully and give the glaze a deep, complex sweetness.
🔥 Cooking Tip:
- Don’t overcook your salmon! It’s done when the flesh flakes easily with a fork but is still moist inside. Overcooked salmon = dry and sad.
🌶️ Customizing Flavour:
- Add more red pepper flakes if you like a sweet-heat combo.
- Want it tangier? Add a splash more lemon juice or a tiny bit of apple cider vinegar.
🍽️ Make It a Meal:
- Great with sides like:
- Roasted brussels sprouts or asparagus
- Wild rice or jasmine rice
- Mashed sweet potatoes
- A crisp green salad with lemon vinaigrette
🧊 Make-Ahead & Storage:
- You can prep the glaze up to 3 days in advance—store it in a jar in the fridge.
- Leftovers keep well for 2 days and are great flaked into a salad or rice bowl.

For the Glaze
Instructions
-
1. Prep the glaze:
-
In a small saucepan, combine all glaze ingredients. Bring to a simmer over medium heat. Let it bubble gently for 3–4 minutes, stirring often, until it thickens slightly (don’t let it burn). Remove from heat.
-
2. Season the salmon:
-
Pat salmon dry with paper towels. Season both sides lightly with salt and pepper.
-
3. Sear the salmon:
-
Heat olive oil in a large skillet over medium-high heat. Place salmon fillets flesh side down and sear for 3 minutes until golden. Flip, then reduce heat to medium-low.
-
4. Glaze & cook through:
-
Brush salmon generously with maple glaze. Cover the skillet loosely with a lid or foil and cook another 4–5 minutes, basting once or twice more, until the salmon is just cooked through and flakes easily with a fork.
-
5. Serve:
-
Drizzle with any leftover glaze from the pan. Garnish with sliced green onions or toasted sesame seeds if desired. Pairs beautifully with roasted veggies, rice, or mashed sweet potatoes.
