Instructions

In a bowl, mix honey, soy sauce, garlic, and cornstarch slurry (if using). Set aside.

Heat oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until golden (6–8 min).

Add veggies to the same pan and cook for 5–6 minutes, stirring often.

Pour in the sauce, reduce heat to medium, and let it simmer for 2–3 minutes until slightly thickened and everything is glazed.

Serve hot — as is, or over a bed of quinoa, rice, or cauliflower rice if you want to keep it low-carb.
