Chickpea Curry

A quick, comforting, budget-friendly chickpea curry made with simple pantry ingredients. Ready in under 30 minutes and perfect for meal prep. Serve over rice or with warm naan.

  1. 1. Heat the oil in a large skillet over medium heat.
  2. 2. Add the chopped onion and cook for 5–6 minutes, until softened.
  3. 3. Stir in the garlic, curry powder, cumin, and turmeric. Cook for 1 minute until fragrant.
  4. 4. Add the chickpeas, diced tomatoes, and coconut milk (if using).
  5. 5. Season with salt and pepper.
  6. 6. Bring to a simmer and cook for 12–15 minutes, until thickened.
  7. 7. Taste and adjust seasoning.

Note

Substitute coconut milk with vegetable broth for a lighter version.
