Chickpea Curry
A quick, comforting, budget-friendly chickpea curry made with simple pantry ingredients. Ready in under 30 minutes and perfect for meal prep. Serve over rice or with warm naan.

1. Heat the oil in a large skillet over medium heat.

2. Add the chopped onion and cook for 5–6 minutes, until softened.

3. Stir in the garlic, curry powder, cumin, and turmeric. Cook for 1 minute until fragrant.

4. Add the chickpeas, diced tomatoes, and coconut milk (if using).

5. Season with salt and pepper.

6. Bring to a simmer and cook for 12–15 minutes, until thickened.

7. Taste and adjust seasoning.

Note
Substitute coconut milk with vegetable broth for a lighter version.
Add spinach in the last 5 minutes for extra nutrients.
